Start by snapping and preparing your fresh asparagus.  I used two bundles for this dish.

Coarsely chop one onion.

Wash and slice baby potatoes.  I used baby reds.  They are sold in bags and I ended up using about 3/4 of one bag.

In a skillet combine olive oil and garlic.  I started the potatoes first and let them cook on medium heat for about 15-20 mins.  Stir regularly.

After the potatoes start to get tender, add the asparagus and onion.  Stir and cook over medium heat until tender.

We had this last night with the Chicken Parm Bake.  Delicious!

 

 

One of the best Pinterest recipes Ive made so far!  Chicken Parm Bake.  In a 9×13 baking dish, combine about 2 tablespoons of olive oil, and 2 tsps of minced garlic.

Sprinkle with Red Pepper Power or Flakes.

Place 4-5 chicken breasts in casserole dish.

Cover with 2/3 of a jar of marinara sauce.

Sprinkle basil over chicken breasts.  Cover with 4 oz of mozzarella and 2 oz of parmesan cheese.

Cover chicken with garlic croutons.

Cover with remaining 4 oz of mozzarella and 2 oz of parmesan.

Bake @ 350 for 35 mins.  The marinara sauce soaks into the croutons and makes a nice crust over the chicken.  SOOOO GOOD!!
